Ingredients:
Yields: 12 cookies
- 1 1/2 cup all purpose baking flour
- 1/3 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup (1 stick) room temperature butter
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp almond extract
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 cup white chocolate chips
- 1/2 cup chopped macadamia nuts
Materials:
- Medium bowl
- Large mixing bowl
- Wooden spoon
- Small spoon
- Mixer
- Cookie sheets
- Oven
- Measuring spoons
- Measuring cups
- Parchment paper
- Wire rack
- Preheat oven to 350 degrees and line baking sheets with a layer of parchment paper to prevent cookies from sticking to the sheets.
- Combine flour, salt, and baking soda in a medium bowl and set aside.
- In a large mixing bowl, beat together butter, granulated sugar, and brown sugar until the mixture is light and fluffy. Add vanilla and almond extracts and egg then beat until thoroughly combined.
- Slowly add the flour mixture to the large bowl and beat on high speed until completely mixed. Dough should be slightly sticky and thick.
- Add white chocolate and nuts into the dough and mix with a wooden spoon until the goodies are distributed evenly.
- Drop spoonfuls of dough onto the cookie sheet leaving roughly two inches between each spoonful to allow room for the cookies to spread out.
- Bake cookies for 12 minutes or until golden brown around the edges.
- Let cool on a wire rack for a few minutes. Cookies will store in an airtight container for up to seven days.
This recipe is adaptable to fit the whole family’s needs. Simply substitute out the white chocolate and nuts for 1 cup of semi-sweet chocolate chips for a more classic cookie or 1 1/2 cup raisins for a healthier snack option. This recipe was originally posted here.
